Dry Rubbed Chicken


Recipe

3/4 cup Kosher Salt
3/4 cup light brown Sugar
3/4 cup white vinegar
3 tbsp. dry barbecue seasoning ( i got mine at kroger in their spice section. Was only $1)
large bone-in, skin on chicken breast halves
1. Combine 8 cups of water, 3/4 cup each of salt, brown sugar, vinegar and 1 tbsp. of barbecue seasoning in a large plastic container to create a brine. (i used a giant ziplock bag)
2. Add chicken to container and refrigerate for 2 to 4 hours.
3. Preheat oven to 350
4. Remove chicken from brine and pat dry.
5. Combine 1 tsp each of salt, brown sugar and bbq seasoning. (the recipe called for only 2 chicken breasts, so i doubled this and did 2 tsp each for rub) and rub onto chicken.
6. Place chicken in a roasting pan, add 2 tbsp water to bottom of pan and roast for 45-50 minutes.
7. Remove from oven and let rest for 5 minutes

** only 360 calories per chicken. YUMMY **
