Lemon Berry CheeseCAKE


Now that I am officially HOOKED on Pinterest - dang it, I am using some recipes I have found on there and kinda making them my own.
Anyone who knows me knows I HATE frosting of any kind.  I think it is disgusting.  Always have, always will. NASTY stuff.  I will scrape it off everything from gourmet cupcakes to cakes to whatever it is put on.  I DON'T LIKE IT.
I made a dessert last week with pretzels as the base then a cream cheese type layer then jello w/strawberries.
This gave me a good idea for a cake topping that I tried tonight.
I used a lemon cake mix I had then baked up following it's directions.  Other than only having 2 eggs instead of the instructed 3 (applesauce seemed to do the trick) I baked that up and let it sit.
Then I made a cheesecake type layer.   1 package of cream cheese at room temp with about 1/3 small container of french vanilla cool whip. I wanted it more cream cheese than cool whip.  Mixed that up in my handy dandy pink Kitchenaid mixer with a tad bit of sugar.  I don't really measure when I cook unless it's canning or totally required or it gets messed up.  I only added the sugar because after mixing the cream cheese and cool whip it didn't taste sweet enough for my hubby's taste buds.  (almost 8 years of marriage, I know this taste now)  It was maybe 2 spoonful's of sugar.  Mixed up and spread on top of the cake.  I had a can of Dunkin Hines Berry Mix Comstock I got practically free with a coupon a few months back I had been wanting to use.  Oh, speaking of which, all the ingredients for tonight's dessert cost me about $.50 with my coupons.  Yes, we LOVE coupons in our home.
So I put this on top to finish off the dessert.
I am not much of a dessert person, but I actually had most of a piece myself, and it was rather tasty.  Something I will keep in our cycle of desserts. 
And little Michael after telling me it looked disgusting had some (of course, he got his liking for sweets from his daddy) said it was really good.
