I found this really yummy receipe adding all fresh ingredents and it looked so good and healthy. Something this weekend I was craving. Because of my husband who every meal has to have some meat I added some chicken/pineapple/bacon sausage we got at Sams Club. The original receipe didn't call for it, but it was a VERY yummy addition.
It was FARMERS MARKET day on Saturday and got almost everything for this meal from that.
I took the corn off 4 ears of corn, and place water in the container and cooked in microwave for maybe 5 minutes.
We got cherry tomatoes, so I cut those in half.
In sauce pan I browned the sausage, added a bunch of green onions, tomatoes and chicken stock. The receipe called for white wine. We are non alcoholic folks here in our house so I skipped that part.
The receipe called for some pasta that I couldn't find in the grocery store, so I found some that were on the funky side for fun. I cooked them separate. I would cook more on the undercooked side because when you mix together with other ingredents, it cooks more. Ours became overcooked. STILL GOOD, but next time I will do differently.
I added some fresh basil at the end, and YUMMY!

RASPBERRY JAM
I took today off to clean my house which is driving me up the freaking wall, and to make a quick batch of raspberry jam. Kroger had the raspberries for $1 a carton, and according to my raspberry expert (my mom) that was a great price. I have gotten into the canning mode this past month with making peach freezer jam. Well today I wanted to do the canning and not freezer jam. We are getting ready to move in 4 months and I don't want this taking up space in our freezer.
I got some strawberries from the FARMERS MARKET and 2 more containers to stretch out the raspberry jam. Not sure why I thought 20 containers of raspberries wouldn't make that much.
23 jars later......... yeah, and a run back to Walmart to get more jars (thankfully I didn't need those, but I almost did)
First time making jam this way. Thank goodness for my mom. Apparently you need to COOK this. Realized this after I had done 12 jars, but what are 12 ruined lids. so into a HUGE cooker to cook down and boil. Thankfully it reduced in size so this is why I didn't end up needed my extra jars. I did pick up a stock pot at Walmart so I was able to can 14 jars at a time. whoo hoo!
As I am typing this I am hearing the pops of the jars in the kitchen. I can't wait to try this. What I did do"quality control" on tasted amazing.
I just followed the receipe on the pectin jar and with the help of my old pro of a mom, think I did pretty good.
btw, haven't EVEN gotten to the house cleaning yet. Maybe next time.
